Rita shares a yummy fruit salad

Here it is after the holidays and we’re thinking healthy….but food has to taste good. This fruit salad fills the bill!

LAINIE’S SPICY FRUIT SALAD

2/3 cup sugar or substitute

1/3 cup water

1 jalapeno pepper, seeded and sliced

1 Tbsp. fresh lime juice

2 cups diced and diced Granny Smith apple

2 cups diced fresh pineapple

2 firm, ripe bananas, sliced

2 cups jarred or fresh orange segments, drained if jarred

1/2 cup dried cranberries

1/3 cup chopped fresh cilantro

Grapefruit segments (optional but good)

Simmer sugar, water and jalapeno in a saucepan over medium heat until sugar dissolves, about 5 minutes. Stir in lime juice; strain and chill.

Toss apple, pineapple. banana, banana, orange segments, cranberries and cilantro with chilled syrup to coat ingredients.
